[Hong Kong] Birthday Celebration at 1* Belon

For my birthday this year, I decided to celebrate at French bistro Belon which had just received 1 Michelin Star in the 2019 Michelin Guide and was #40 on Asia's 50 Best 2018. My first visit was years ago when it first opened and before current chef Daniel Calvert took over the helm. It has since become a darling in the media and with industry insiders alike so I knew that I had to revisit. While you can order a la carte, I left most of the ordering to Chef Calvert. Combining local ingredients with simple French cooking, I can see why the restaurant appeals to many with its "classic dishes" which come with a creative flair. The restaurant has also proven to be really popular as I bumped into many industry people that night including Chef Guillaume Galliot of the newly minted 3* Caprice!

The Hokkaido Scallop with Shio Kombu and Pomelo turned out to be our favorite of the night - the scallop was wrapped in a thin ravioli skin which gave it a slightly chewy mouthfeel, and the sauce was just brilliant with the use of seaweed for the umami taste and retaining the pomelo pulp for the added texture.
“Croque Madame” with fresh truffles from Perigord - a clever twist on the classic French sandwich by removing the ham physically and rendering the flavors into a sauce instead.
While I left most of the ordering to the chef, my only request was this beautiful Pigeon Pithivier with Fig and Amaretto.
Our meal concluded with the highly raved about Millefeuille of course but I actually liked the "Tarte au Chocolat" (recipe by Chef Bernard Pacaud of L'Ambroisie) more.
