A superb first meal in Italy at Autem Milano by Tuscan-born Chef Luca Natalini! The menu basically changes every day depending on the best seasonal produce in order to convey the beauty of the ingredients. The dishes were highly creative with excellent execution - no wonder it’s been named one of Opinionated About Dining’s Top New Restaurants in Europe! Highlights included the raw langoustine, snails with potato foam, salad with smoked eel, veal sweetbread, and the signature Pasta in Bianco - a brilliant sweet and sour spaghetti with honey and plum vermouth!

Welcome Snack
- cacio e pepe breadstick
- welcome water (apricot, bitter orange, grapefruit)
Amuse Bouche
- mini taco with sausage and swisschard
- tartelette with marinated green beans
- air macaroon with beetroot filling
- salty brisè with liver parfait and tomato gel
- waffer with caramelized onion and burre blanc
Raw Langoustine from Viareggio with crispy buckwheat, asparagus, and thalli of garlic
The Salad - spontaneous herbs salad with eel, smoked vinaigrette
Snails cooked as a bourguignonne chanterelles mushroom, wild spinach sauce, bolognese potato foam
Veal Sweetbread, altedo asparagus and caviar
PASTA IN BIANCO - cooked in bayleaf water, honey, vinegar, plum vermouth
Tuscan Ravioli - filled with the idea of the “crostino toscano “ fennel salad, vin Santo gel
Pigeon cooked by its full and served with all his parts: chest, wings, filet, priest bite, tartelette with all his less nobles part and orange marmalade
