[Hong Kong] Preview of Taste of Hong Kong 2017
Taste of Hong Kong is happening again this year from March 16th-19th at the Central Harbourfront! If you are not familiar with the food festival, Taste started in London back in 2004 and has made it way to 18 cities around the world including Hong Kong which happened for the first time last year. It's a festival that aims to allow people to sample a taste of Hong Kong from the best restaurants in the city including Amber, Arcane, Tin Lung Heen, Tosca and many more. Each restaurant will offer 3 signature dishes including 1 icon dish that is limited edition only, and I had the chance to preview some of the dishes that will be offered by Rhoda, Zuma and Duddell's earlier this week!
Our first stop of the night started at Rhoda where Chef Nate Green talked to us about his philosophy of sustainable food and how that applies to some of the dishes he is presenting at the festival. We got to try two of his creations including the luscious Wagyu short rib and bone marrow with sustainable caviar and the slow-cooked lamb shoulder, but I'm even more intrigued by his other dish that we didn't get to try - Spaghetti & Meatballs with Mangalica Pork Pig Skin Spaghetti. I had just watched a Eater video about a chef in SF using pig skin as pasta, and I'm dying to find out what that tastes like - can't wait to find out at the festival! Don't miss his Wild Hereford Ox Heart Tartare as well which has been one of the staples on his ever changing menu at Rhoda!

Zuma
We then stopped by Zuma where we ended up trying 3 dishes from the festival menu - courtesy of Chef Samuel Wilkes. Vegetarians can rejoice as Zuma will be offering a vegetarian dish of crispy avocado temaki that's light and refreshing with a burst of flavors from the yuzu pearls. The Zuwagani and king crab cold noodles along with the Hokkaido roasted rice ice cream were also outstanding, and while it was hard to choose a favorite among all the dishes we had at this preview, the ice cream was definitely a front-runner!

Duddell's
Our last stop of the night included a tasting of the exclusive cocktails that will be served by the JIA Group at the Taste of Hong Kong VIP Lounge - Banana Old-Fashioned, Sailor's Martini, and Ninjaaa. One the food side, it's Duddell's second year of participation and this year they're bringing back the pan-fried M9 Australian Wagyu by popular demand! Other dishes that will be offered includes baked lobster with garlic and cheese, steamed garoupa with egg white pudding, and pork dumplings with black truffle.
