MUME is named for Taiwan’s national flower plum blossom. Chef Richie Lin pays tribute to the unique terroir of the island with local ingredients and modern European techniques. Aside from fresh produce, even tea, coffee, chocolate, rice etc are sourced locally in Taiwan. The restaurant was awarded the Sustainable Restaurant Award by Asia’s 50 Best in 2022.
It was my first time to Mume and our group was seated in the private dining room in the basement cellar. Great food and wine interlaced with laughter flowed freely throughout the night. There were two dishes that really stood out to me: the Pickled Bonito with Perilla Plum and Spice Oil which had been proclaimed as “a perfect dish” by Chef David Lai of Neighborhood, and the Cuttlefish ‘Pasta’ with 'Nduja and Bell Pepper.
