Follow me to Central Restaurante in Lima - named the World’s Best Restaurant in 2023! Founded by Virgilio Martinez in 2008, the restaurant takes diners on an incredible culinary journey through the many different ecosystems and biodiversity in Peru. Extensive effort has been made to discover indigenous ingredients in the country - leading to the creation of research center Mater and restaurant MIL in Sacred Valley. The 14-course tasting menu at Central is categorized by altitude with each dish reflecting the origins of its ingredients from the depths of the Pacific Ocean to the heights of the Andes Mountains.
While I’ve tried dishes in the past from Central at collaborations and sister restaurant Maz in Tokyo, it was still an eye opening experience as it goes much deeper into all the unique Peruvian ingredients - many that I’ve never had before. Various dishes and ingredients were brought to our table for each course as the ecosystems come to life before us. Eating here was like a trip within a trip as it felt like we were traveling around Peru while still inside the restaurant - definitely a one of a kind dining experience.
